Today's Recipe - Chocolate Bread Pudding Recipe

Recipe: Ingredients: 4 cups whipping cream 3/4 cup packaged dry bread crumbs 10 ounces white chocolate wafers 1 Italian roll, 6 inches long 4 medium eggs, beaten 1/2 teaspoon almond extract 1 cup granulated sugar 1 teaspoon salt ***WHITE CHOCOLATE SAUCE*** 4 ounces white chocolate wafers 1 cup whipping cream DIRECTIONS: Scald 3 cups whipping cream. Stir in bread crumbs, remove from heat and steep mixture for 20 minutes. Heat remaining 1 cup whipping cream. Remove from heat, add 6 oz white chocolate wafers and stir until melted. Cut roll in small cubes (~3 cups) and stir into white chocolate mixture (NB: this is the mixture of 1 cup heated whipping cream and 6 oz white chocolate) followed by eggs, almond extract, sugar and salt. Add the "3 cups whipping cream + bread crumbs" mixture to white chocolate mixture. Fold in remaining 4 oz white chocolate chopped into chunks. Pour mixture into greased 7-to-8-cup casserole and bake in a 300 F oven until set about 50 minutes. Cool then refrigerate until pudding is firm enough to cut in to 1 inch think slices. Serve with sauce. WHITE CHOCOLATE SAUCE: Heat 1 cup whipping cream with 4 oz (125 g) white chocolate.
