Today's Recipe - Bread Pudding

Recipe: Ingredients: 1 1/2 c. water 3/4 c. nonfat dry milk powder 2 eggs 1/2 tsp. salt (optional) 1 tsp. vanilla 1 1/4 c. sugar 1/4 c. butter, melted 8 slices of bread, torn into fourths 1 c. raisins DIRECTIONS: Put all but bread and raisins into blender and blend half a minute or until thoroughly combined. Arrange bread pieces and raisins evenly into greased 9-inch square baking dish. Pour milk mixture over pieces and stir lightly with blade of a knife to completely moisten all pieces of bread. Set baking dish into baking pan -- not glass -- adding 1 inch of water to pan. Bake pudding at 350 degrees 45 to 50 minutes, or until knife inserted into center comes out clean. Cool in dish in the pan of water until water is lukewarm. Add the sauce to top of pudding upon removing from oven. SAUCE FOR BREAD PUDDING: 1 1/2 c. water 2 tsp. vanilla Dash salt 1/4 c. nonfat dry milk powder 1/4 c. sugar 2 tbsp. cornstarch Blend at high speed half a minute or until smooth. Pour mixture into saucepan and cook, stirring constantly over medium high about 6 to 8 minutes or until thick. Pour over bread. Recipe makes 6 to 8 servings.
