Today's Recipe - Brown Sugar Shortbread

Recipe: Ingredients: 1 stick (4 oz.) unsalted butter, softened 1/3 c. (packed) light brown sugar 1/2 tsp. vanilla extract 1 1/4 c. all-purpose flour DIRECTIONS: Preheat oven to 325 degrees. Butter an 8-inch round cake pan. In a medium mixing bowl, combine the butter, brown sugar, and vanilla. Beat with an electric mixer until fluffy. Gradually add the flour, 1/4 cup at a time. When the dough becomes too stiff to beat, mix by hand. Transfer to the cake pan. Press flat and prick the surface all over with a fork. Bake for about 50 minutes, until lightly browned. Remove to a wire rack to cool. Cut into 8 wedges and serve.
