Today's Recipe - Soft Oatmeal Cookies

Recipe: Ingredients: 1/2 c. butter 1/2 c. Crisco 2 c. light brown sugar, packed 2 c. plain flour 2 eggs 2 tsp. soda 2 tsp. cinnamon 2 c. quick oatmeal 1 tsp. vanilla DIRECTIONS: Cream sugar with shortening. Beat in eggs. Mix soda with flour, then add dry ingredients and mix with creamed mixture. Stir in vanilla. Chill mixture for at least 1 hour. Pinch off small amounts and form balls by rolling in the palms of hands. Place about 2 inches apart on a slightly greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. When cookies are cool, spread filling on 1 cookie and put another cookie on top, sandwich style. FILLING: Ingredients: 1/2 c. sifted flour 1 c. milk Dash of salt 1 c. butter 2 1/2 c. sifted powdered sugar 1 tsp. vanilla DIRECTIONS: Blend flour and a little milk in saucepan to make a smooth paste. Stir in remaining milk. Cook over medium heat, stirring constantly, until thick and clear. Cool. In mixing bowl, cream salt, butter, sugar and vanilla until light and fluffy. Add milk mixture, 1 tablespoon at a time. Beat until smooth.
