Recipe: Ingredients:
Eggs (medium to large) 4nos
Onions (large) 2nos (sliced)
Tomatoes (large) 3nos (sliced)
White Vinegar 3 tblspns
Cloves
Cinnamon 2 sticks
Jeera 1 tspn
Turmeric 1/2 tspn
Jeera powder 1 tspn
Chilly powder 1 tspn
Salt to taste
Oil 3 tblspns
Coriander for garnishing
DIRECTIONS:
and add to it jeera, cloves, and cinnamon.
After it starts spluttering add the sliced onions and fry till the onions start to caramelize.
At this point add the sliced tomatoes and stir well till the tomatoes appear soft.
Add the masalas: turmeric, jeera powder, chilly powder, salt and vinegar and stir well.
spread this mixture till it covers the base of the pan.
Break and add each of the eggs so that the eggs have separate places in the pan to cook.
Add the freshly chopped coriander and cover the pan with a lid.
Reduce to medium heat and let it cook for about 10-15 minutes.
The eggs are ready when the egg whites have covered the yolks and you find that the yolks have hardened beneath the covering.
Serve each egg with some gravy and enjoy with bread or hot rotis
