Recipe: Ingredients:
mixed lentils (chickpeas, green gram, kabuli chana or any other dried beans)- 1 cup
onion-3 med sized
tomatoes-2
tamarind- 1 small ball.
brinjal- 2
potatoes- 2
Grind together:
1/4 cup fresh coconut,
1 onion lightly sauted,
chilli powder 1 spoon,
coriander leaves 1/2 bunch.
DIRECTIONS:
First boil the lentils with chopped onion, tomatoes, potatoes in a pressure cooker (min5-6 whistles).
Next add the ground paste, tamarind extract, brinjal, salt.
Bring to boil and continue to boil till the curry thickens.
Season with mustard and curry leaves.
You can add chopped carrots for added taste.this curry goes well with both rice and rotis
