Today's Recipe - Key lime pie

Recipe: Ingredients: 1 baked 9" pie crust 1/2 c. sugar 1 env. unflavored gelatin 4 egg yolks, slightly beaten 2/3 c. water 1/3 c. fresh lime juice 4 egg whites, beaten until frothy 1/2 tsp. cream of tartar Pinch of salt 1 c. whipped cream DIRECTIONS: In saucepan mix 1/2 cup sugar with the dry gelatin. Add the beaten egg yolks. Add water and lime juice. Cook over medium heat until mixture starts to thicken. Remove from heat, cool in refrigerator until mixture starts to jell. Beat egg whites. Add cream of tartar and salt. Gradually add sugar. Fold into cooked mixture until all whites disappear. Fold in whipped cream. Fill pie crust with mixture and chill. Keep refrigerated. Optional: Since lime juice is not green you can add 1 drop of green food coloring to the filling. Serve topped with whipped cream if desired.
